Dhokla

1. Dhokla

Ingredients:

Besan - 1 Cup
Curd - 1 Cup
Turmeric powder - 1/4 tsp
Ginger, grated - 1 tbsp
Green chillies, finely chopped - a few Sugar - 1/2 tsp
Salt - 1/2 tsp
Oil - 1 tsp
soda/ ENO fruit salt - 3/4 tsp
For Bhagar
Fresh grated coconut (optional) - 1-2 tbsp
Mustard seeds - 1/2 tsp
curry leaves - 8-10
sesame seeds (optional) - 1/2 tsp
green corriander, chopped - 1-2 tbsp
green chillies, whole - 4-5

Method :

  1. Mix besan + dahi to thick paste.

  2. Add adrak + green chillies paste, haldee, salt, sugar and oil. Mix well.

  3. Oil a steel container which can fit inside the pressure cooker.

  4. Add ENO or soda to dhokla mix.

  5. When mixture is bubbly, pour into oiled steel thali or mould.

  6. Steam 10-15 mins (without whistle on cooker) on medium flame.

  7. Cut the dhoklaa into squares.

  8. Heat oil in the kadhai. Add mustard seeds, then et them splutter. Add curry leaves, sesame seeds adn green chillies. Cover it and remove frm heat.

  9. Pour over cut dhokla. Sprinkle dhania and coconut. Serve with gren dhania chutney.
