1. Dhokla
Ingredients:
Besan - 1 Cup
Curd - 1 Cup
Turmeric powder - 1/4 tsp
Ginger, grated - 1 tbsp
Green chillies, finely chopped - a few Sugar - 1/2 tsp
Salt - 1/2 tsp
Oil - 1 tsp
soda/ ENO fruit salt - 3/4 tsp
For Bhagar
Fresh grated coconut (optional) - 1-2 tbsp
Mustard seeds - 1/2 tsp
curry leaves - 8-10
sesame seeds (optional) - 1/2 tsp
green corriander, chopped - 1-2 tbsp
green chillies, whole - 4-5
Method :
Tips --
- Mix besan + dahi to thick paste.
- Add adrak + green chillies paste, haldee, salt, sugar and oil. Mix well.
- Oil a steel container which can fit inside the pressure cooker.
- Add ENO or soda to dhokla mix.
- When mixture is bubbly, pour into oiled steel thali or mould.
- Steam 10-15 mins (without whistle on cooker) on medium flame.
- Cut the dhoklaa into squares.
- Heat oil in the kadhai. Add mustard seeds, then et them splutter. Add curry leaves, sesame seeds adn green chillies. Cover it and remove frm heat.
- Pour over cut dhokla. Sprinkle dhania and coconut. Serve with gren dhania chutney.
