1. Dosa

Ingredients:

Urad dal - 1/2 cup
Rice (par-boiled or normal) - 1.5 Cup
Methi seeds - 1 tsp
Salt - as per taste
Butter/Oil - for making dosa

Method :

  1. Soak rice, dal and methi seeds for 6-8 hours.

  2. Grind to a fine paste the soaked rice, dal and methi seeds. Keep the batter again for 6-8 hours so that it gets fermented well.

  3. While making dosa, if the batter is too thick, then add some water to get the desired pouring consistency. Add salt as much is needed.

  4. In a flat bottomed pan, put 1 tsp oil and heat it. Pour the batter using a big spoon when the oil in the pan is very hot. Allow one side to get cooked first, this will take roughly 3 mins. Then turn over and cook the other side.

  5. Serve hot with coconut chuttney, red hot chuttney podi powder.

2. Masala dosa

Ingredients for masala :

Potatoes - 500 gm
Mustard seeds - 1/2 tsp
Curry leaves - 1 sprig
Dry red chillies - 2-3
Heeng powder - a pinch
Turmeric powder - 1/2 tsp
Rai - 1/2 tsp
Onions - 1-2
Salt - as per taste

Method :

  1. Boil the potatoes with peel in a pressure cooker, but they should not get fully boiled.

  2. Heat oil in a pan. Add mustard seeds, rai, dry red chillies, curry leaves, heeng powder. Fry for 1 min. Add the coarsely sliced onions and fry it. Add the peeled boiled potaoes (cut into big pieces). Add salt and turmeric powder and red chilli powder. and cook for 3-4 mins.

  3. Make the batter for making dosa as above.

  4. Heat oil in a pan. When the oil is hot, pour the batter and cook one side. then one can put the masala in the middle part on the top side of dosa and fold from the remaining sides.

  5. Serve hot with coconut chutney, red chutney podi powder.

Tips -- One can put butter on one side of dosa, which is not cooked before putting the masala inside the dosa to make butter masala dosa.
