Pao Bhaji

1. Pao Bhaji

Ingredients:

Potatoes - 250 gm
Cauliflower - 1 small
Green Peas - 250 gm
Carrots - 250 gm
Onion - 5-6, finely chopped Butter - 100 gm
Lemon juice - 2 lemons
MTR or Ashok Pao Bhaji masala - 2-3 TBSP
Chopped corriander for garnish - 2 TBSP
Green chillies - 2-3 Kaju pieces (optional) - 50 gm
Pao buns or burger buns, toasted

Method :

  1. Boil the potatoes, cauliflower, green peas and carrots. Mash them into a paste with very little water.

  2. Fry the finely chopped onions in butter keeping about 1/2 cup aside for use later.

  3. Add 2-3 TBSP pao bhaji masala (as per taste) and fry for 1-2 mins.

  4. Add mashed vegetables. Simmer for 2-3 mins covered.

  5. The consistency shd be thick but not too thick. Can add water to bring to desired consistency.

  6. Add lemon juice.

  7. Fry kaju until lightly brown.

  8. Garnish with chopped corriander, green chillies and fried cashew just before serving.

  9. Serve the bhaji with hot toasted and buttered buns and chopped onions in a bowl.
